Soft on the mouth and with a unique sweetness, mizu-nasu is a special product
of the Sennan area of Osaka Prefecture. Its inability to grow anywhere else even
when cultivated suggests that it is very sensitive to climate, geological conditions
and water. The plant's sweetness increases with simple boiling or grilling. Juicy
and slightly bitter, mizu-nasu is often lightly pickled, too.

Although water is vital for life, it need not necessarily be clean and pure
to support it. Kawachi renkon, a special product of Kadoma, Osaka, is cultivated
in paddies of clay. Because renkon is the root of the lotus plant, it practically
grows in mud. Even so, renkon is greatly affected by the quality of the water
used to fill the paddies; the renkon grown at Kadoma is famous for its thick flesh
and sticky sensation.

River fishes such as ayu (sweet smelt), iwana (mountain trout), amago (Biwa trout)
and yamame (landlocked salmon) are a delicious treat raised in famous waters.
In the upper reaches of rivers where water quality is good, in addition to being
a habitat for the fish naturally hatched there, fry for farming may be released
or spring water drawn to ponds for fish farming. Kuzuryu River in Fukui, Chikusa
River in Hyogo and Hiki River in Wakayama are some of the clear streams in the
Kansai region. These rivers are famous for fishing and for such river fish dishes
as grilled salted fish and candied fish.

The Yoshino River, a leading example of a clear stream in Shikoku, is often called
the Mother River of Tokushima Prefecture and is home to such river fishes as ayu
and amego (amago), which have become special products of that area. It is also
famous for the suji-aonori (green laver) that can be picked at its mouth. The
Yoshino's yield of suji-aonori is renowned as the largest in Japan, greater even
than that of the Shimanto River in Kochi.
